Ingredients

  • 680 g boneless skinless chicken breast (1 1/2 pounds), sliced into four cutlets
  • 3/4 teaspoon fine salt, divided
  • 1/2 teaspoon black pepper
  • 30 g all-purpose flour (1/4 cup)
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 3 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 180 ml low-sodium chicken broth (3/4 cup)
  • 180 ml heavy cream (3/4 cup)
  • 60 g oil-packed sun-dried tomatoes, drained and sliced
  • 40 g finely grated Parmesan (1/2 cup)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon chili flakes, optional
  • 1/4 cup torn fresh basil

Method

  1. Pat evenly thick cutlets dry. Season with 1/2 teaspoon salt and pepper, lightly dredge in flour and shake off excess. Heat oil and butter in a wide skillet over medium-high heat.
  2. Sear chicken 4–5 minutes on each side until golden. Transfer to a clean plate; it will finish cooking in the sauce. If the flour begins to burn, reduce the heat immediately rather than letting dark burned bits collect.
  3. Lower heat to medium-low. Add garlic and tomato paste, stirring 30 seconds. Pour in broth and scrape up the browned fond. Add cream, drained sun-dried tomatoes, oregano and optional chili flakes. Bring to a gentle simmer for 3 minutes.
  4. Return chicken and plate juices. Simmer gently 4–8 minutes, turning once, until each thickest part reaches 165°F (74°C). Remove from direct heat, then stir Parmesan into the sauce around the chicken until smooth.
  5. Rest 5 minutes. Fold in basil and taste, adding remaining salt only if needed. If too thick, loosen with a little broth; if thin, remove chicken and simmer sauce briefly before returning it. Serve one cutlet per person; accompanying starches are extra.
