These are nuggets made from pieces of chicken breast, not a blended chicken mixture. Cutting the meat to a consistent size helps the coating and center finish together. A flour, egg and panko coating gives a crisp exterior with a measured amount of oil. The batch is sized for a family, with two basket rounds included in the cooking time.
What makes this method work
Keep the pieces about 1 inch across and no more than 3/4 inch thick. Shake off surplus flour, allow excess egg to drip, and press on the crumbs. A thin, secure coating browns more evenly than a thick wet shell. Lightly oil the coated nuggets and turn them carefully so the panko stays attached.
Ingredients and useful choices
- Chicken: Use thawed boneless skinless breast; trim any tough tendons before cutting.
- Panko: Fine ordinary breadcrumbs can be used, but the texture will be less craggy.
- Breading: The bowls need more flour and crumbs than will remain on the chicken. Discard everything that touches raw chicken; never save contaminated leftovers.

Time, portions and basket space
This recipe yields 4 servings; one portion is one-quarter of the batch. Preparation: about 20 minutes. Cooking allowance: about 20 minutes. Total planning time: approximately 40 minutes.
Allow 8–10 minutes per batch; two batches are included in the 20-minute cooking allowance. Cutting and coating take about 20 minutes.

Ingredients
Equipment
Method
- Cut the chicken into roughly 1-inch (2.5 cm) pieces no more than 3/4 inch (2 cm) thick. Pat dry.
- Put the flour and half the salt in one bowl. Beat the egg with water in a second. Combine panko, paprika, garlic powder and the remaining salt in a third.
- Dust chicken with flour, shake off the excess, dip in egg and press into panko. Set on a plate, leaving the coating intact. Brush or spray lightly with the measured oil. Discard unused breading mixtures after coating.
- Preheat to 390°F (200°C), following the manual. Arrange half the nuggets in one layer and cook 8–10 minutes, turning after 5 minutes.
- Check several of the largest nuggets with a thermometer: the center must reach 165°F (74°C). Add time if needed. Transfer to a clean plate, cook the second batch and serve promptly.
Notes
Questions and troubleshooting
Can I use ground chicken?
Not with this method. Ground chicken needs a binder and a shaping method; it is not a direct substitution for the cut breast pieces.
Why are the crumbs pale?
Dry floury spots or too little oil can stay pale. Apply a light even coating of oil and leave room around each piece. Do not keep cooking past safe doneness simply to make every crumb dark.
Storage and reheating
Refrigerate within 2 hours for up to 3–4 days. Reheat in one layer until the chicken reaches 165°F (74°C). The crumbs will soften during storage but can re-crisp somewhat in the air fryer.
Estimated nutrition per serving
Conservative ingredient estimate counting all flour, egg, crumbs and oil offered for coating; actual intake may be lower because some breading is discarded. Dip is excluded. These are rough ingredient-based estimates, not laboratory measurements. Brands, portions, oil retention and substitutions affect the result.
