Air fryer french fries ready to serve

These air fryer French fries are made from fresh russet potatoes, a little oil and salt. A short soak removes surface starch, but drying afterward is just as important. Expect browned edges and a fluffy center rather than the exact shell of a deep-fried restaurant fry. Cut them evenly and cook in batches so they roast instead of steaming.

What makes this method work

Quarter-inch sticks cook more predictably than a mixture of thick wedges and tiny pieces. Soaking loosens starch on the cut surfaces; it does not remove the potato’s carbohydrates. Dry the sticks thoroughly before adding oil. Shake the basket several times, and judge the final minutes by color and tenderness rather than by a rigid timer.

Ingredients and useful choices

  • Russets: Their floury texture suits fries. Leave the skin on after scrubbing or peel them; discard green areas and heavily sprouted potatoes.
  • Oil: A measured tablespoon is enough to lightly coat this batch. More oil will not compensate for a packed basket.
  • Salt: Add most of the salt after cooking so it sticks to the warm surface and can be adjusted to taste.

Evenly cut potatoes need space between them for the edges to brown.

Time, portions and basket space

This recipe yields 4 servings; one portion is one-quarter of the batch. Preparation: about 15 minutes. Cooking allowance: about 40 minutes; soaking: 30 minutes. Total planning time: approximately 85 minutes.

Two batches take about 36–44 minutes of cooking. The 30-minute soak is separate; preheat during the final drying stage. Smaller baskets may need a third batch.

Air Fryer French Fries with Golden Edges

These air fryer French fries are made from fresh russet potatoes, a little oil and salt. A short soak removes surface starch, but drying afterward is just as important.

Ingredients

  • 1 1/2 pounds (680 g) russet potatoes
  • 1 tablespoon (15 ml) olive oil or canola oil
  • 1/2 teaspoon fine salt (3 g)
  • 1/4 teaspoon black pepper

Equipment

  • 5–6 quart air fryer
  • Large bowl
  • Clean kitchen towels

Method

  1. Scrub the potatoes and cut into sticks about 1/4 inch (6 mm) thick. Trim any green areas. Put the sticks in a bowl of cold water.
  2. Soak for 30 minutes, then drain and rinse. Spread over clean towels and pat thoroughly dry, including the creases between sticks.
  3. Preheat to 380°F (195°C), following the appliance instructions. Toss the potatoes with the oil and pepper. Arrange half in a loose layer; minor overlap is fine, but avoid a deep pile.
  4. Cook for 18–22 minutes, shaking after about 6 and 12 minutes. Remove any small fries that brown early. The centers should be tender and the edges golden. Add a few minutes if needed rather than raising the temperature sharply.
  5. Toss the cooked fries with half the salt. Cook the remaining batch and use the remaining salt. Serve immediately, or briefly re-crisp the first batch after the second is done without overcrowding.

Notes

Planning times depend on batch size, thickness and appliance. Two batches take about 36–44 minutes of cooking. The 30-minute soak is separate; preheat during the final drying stage. Smaller baskets may need a third batch. Nutrition is an ingredient-based estimate per serving (one-quarter of the batch). Per quarter of the raw potato and measured oil quantities, with all the stated salt counted. Dipping sauces are excluded. Illustrative images are generated, not a record of a personal cooking test.

Questions and troubleshooting

Why are my fries limp?

Moisture, thick cuts and a crowded basket are common causes. Dry well, reduce the batch size and let the edges brown before removing them.

Can I cut them ahead?

Keep the cut potatoes submerged in water in the refrigerator for up to a day. Drain and dry thoroughly before cooking. Do not leave cut potatoes soaking at room temperature for extended periods.

Storage and reheating

These are best fresh. Refrigerate leftovers within 2 hours in a covered container for up to 3–4 days. Reheat in a loose layer at 375°F (190°C), shaking until hot and re-crisped.

Estimated nutrition per serving

Per quarter of the raw potato and measured oil quantities, with all the stated salt counted. Dipping sauces are excluded. These are rough ingredient-based estimates, not laboratory measurements. Brands, portions, oil retention and substitutions affect the result.
